8/4/2023 0 Comments Chirashi don tsukijiWhen theres a queue and there are many locals. Much cheaper than the local sushiyas too. Chirashi is basically a bowl of sushi rice topped with sashimi. Next time I’ll have to try their other fish and make a big “deluxe” chirashi. I was surprised by quality of the fish and the yellowtail was actually really fatty, coming from a cut closer to the belly. I made a quick sushi rice, cut the fish (still need practice on this), and added japanese pickles on top. I didn’t have any koshihikari short-grain rice on hand, so I had to fake it with some jasmine rice. Settled on some wild caught bigeye tuna (akami cut), and some yellowtail from Japan. So this morning I drove to one of our Japanese markets and bought some “fresh” sashimi grade fish to cut up and make chirashi (sashimi over sushi rice). Some friends of mine are going to Tokyo and after helping them in their research of Tsukiji market and recommending to them to line up at 7am in the morning to get a sushi breakfast at Sushi Dai or Sushi Bun made my stomach growl.
